All the cuts you receive are cut to order from fresh USDA Choice Beef. All items are vac-sealed, labeled, frozen and boxed.
Cuts included in the Half Beef are below with Hind ¼ cuts marked with and asterisk;
Chuck Roll/Eye - usually cut into roasts for a crock pot or other slow baking methods.
Shoulder Clod – cut into your choice of stew, boneless ribs, cross rib roasts or steaks.
Rib Roast – your choice of Rib Eye steaks or left whole for Prime rib.
Brisket
*Short Loin – cut into T-Bone and Porterhouse steaks.
*Top Sirloin – cut into steaks, cubed or strips.
*Tenderloin – can be cut for Filet Mignon or left whole to roast.
*Tri Tip – left whole to grill
*Flank Steak
*Inside Round – often cut into Top Round roasts but can be cut into steaks.
*Bottom Round – often cut into Rump Roasts but can be cut into steaks.
*Eye of Round – can be left whole to roast, cut for steaks or made into cube steaks.
*Sirloin Tip – Mostly cut for roasts but can be cut for steaks
We also offer the option to receive stew meat (usually 2-4 lbs. worth) with the side of beef. Lastly, with the trim, you get your choice of Lean or Extra Lean ground beef. With the Extra Lean, the yield is roughly 48 lbs on the ½ Beef and 24 lbs. with the Hind ¼. The lean ground beef will yield around 72 lbs on the ½ Beef and 36 lbs. with the Hind ¼
